Marvelicious Mac and Cheese

Directions
Preheat oven to 375° F. Cook macaroni according to package directions. Meanwhile, heat milk and butter in a medium saucepan over medium heat. Gradually whisk in flour, salt, and dry mustard and simmer for 1 minute, whisking occasionally. Remove from heat. Stir in 2 cups of cheese until melted. Add drained macaroni to saucepan and toss with cheese sauce. Transfer mixture to an 8 or 9-inch square baking dish. Bake uncovered until hot and bubbly, about 20 minutes. Let stand 5 minutes before serving.

* Great Substitute: Sauté some chopped red bell pepper and broccoli florets in the butter before adding the flour for a gourmet version of this comforting creation.

  • Macaroni and cheese is always a kid-favorite. Add a serving of fruit or vegetable to this recipe for a balanced meal. Try the Great Substitute mentioned above or get creative on your own. Of course, a cup of cut strawberries or steamed broccoli on the side will always work.
  • Low-fat cheese melts differently than normal cheese. Although the texture may be a little different, your family will thank you for keeping their arteries healthy!
  • If cool enough, the macaroni and cheese is super finger food for toddlers. Remember, a typical serving size for adults is about ½ to 1 cup, toddlers eat ¼ to ⅓ the serving size for adults. Young ones will be overwhelmed with adult-sized portions and, if continually overfed, could possibly have weight problems later in life.
  • Low-fat is not always best. If you are serving children under the age of 2, they should be drinking whole milk, the fat is important for brain development!
  • For extra crunch, add a thin layer of dried, crushed bread crumbs on top of the macaroni and cheese while baking.

  • This recipe is kid-friendly in the eating, not in the preparing! Adults may have to make this recipe on their own, especially with all the heating and whisking.
  • Macaroni and cheese is yummy as a left-over also. Discard any unused casserole after about 3 days. Be sure to store in a covered container.
